Kitchen

Tomatoes, oil, and very little else

Our cook on the discipline of not doing too much to things that are already perfect.

Bowl of ripe tomatoes on a table with linen and herbs

The kitchen at Salt House runs on what the garden and the boats bring in that morning. If the tomatoes are good, they need oil, salt and a plate. If they are not, they go back to the soil.

A menu that changes with the wind

We write the menu at noon, after the fishermen come up from the harbour. Some days there are seven courses. Some days there is bread, fish and a very good salad.

Ask for the oil

The olive oil is pressed in the village from trees you can see from your window. We sell a few bottles each season, but they never last long.
